CHINESE DUMPLING EXPRESS ©




 
Dumplings are cooked balls of dough. They are based on flour, potatoes or bread, and may include meat, fish, vegetables, or sweets. They may be cooked by boiling, steaming, simmering, frying or baking. They may have a filling, or there may be other ingredients mixed into the dough. Dumplings may be sweet or spicy. They can be eaten by themselves, in soups or stews, with gravy, or in any other way.
While some dumplings resemble solid water boiled dough such as gnocchi, others such as wontons resemble meatballs with a thin dough covering.
In Chinese cuisine, dumplings are often served in Dim Sum restaurant in various preparations as mentioned earlier.
In this preparation, ground beef and fresh mushroom are the main ingredients and wonton wrappings made of flour are used as covering.


Ingredients, Preparation and Cooking Steps for 4



Prepare chopped onions, carrots, fresh mushroom, parsley or cilantro and few pieces of Chinese cauliflower.
Prepare 1 lb ground beef.
Combine all the prepared ingredients and ground beef together in a large bowl. Add 3 tbs vegetable soya sauce, 3 tbs mushroom sauce, 1/2 tbs sesame oil, 1 tbs chicken stock brand, 1/2 tsp pepper, and (soy bean paste - optional).
Combine and blend ingredients and sauces.
Prepare wanton wrapper. Wet corner of each wrapper with drops of water each time before wrapping. Bring the four corners of wrapper together to meet in the centre and pinch to hold the edges together.
Dumplings ready for steaming. 
Place Chinese cauliflower leaves on the base of the bamboo basket and place dumplings on the leaves. 
Steam for 30 minutes in medium heat. Check constantly to avoid overcooking.  
Dumplings nicely cooked and ready for serving. Note: For dipping - Light soya sauce or vegetable soya sauce with some chilli paste are good for dipping.
