A quick and easy way to prepare Roasted Chicken and Chicken Rice is to cook both the chicken and rice at the same time using oven pan in the oven. This recipe can also be used on crock-pot or slow cooker.
Chicken is first marinated with seasonings, and taste better preferably if done overnight and chilled in refrigerator before cooking the next day.
Ingredients, Preparation and Cooking Steps for 4
Ingredients & Seasonings:-
- 7 tbs chicken stock
- 3 tbs butter/margarine
- 10 garlic cloves - sliced
- 1 tbs black pepper
- 2 tbs seasoning essence
- 1/2 tsp white pepper
- 2 cups washed rice grain
- Rub 3 tbs chicken stock powder, 1 tbs black pepper, 2 tbs seasoning essence on whole chicken.
- Insert 1 tbs butter under chicken skin. Repeat twice on other side of chicken skin.
- Spread garlic over chicken skin.
- Place seasoned chicken over washed rice grain in oven pan.
- Add water to cover rice grain - measure 1 cm above top level of rice grain.
- Add 4 tbs chicken stock & 1/2 tsp pepper & garlic to rice grain.
Cooked in oven at 425 F for 75 minutes.
Roasted Chicken and chicken rice is nicely done and flavorsome.
When cooked, lay in the open to cool.
Notice oil from chicken and butter drains into rice grain and combines with the garlic, pepper and chicken stock during the cooking to become a flavorsome, fragrance chicken rice.
Serve a slice of Roasted chicken part with fragrant rice toppled with raisins, and for the side, use celery, tomato and pineapple.
