BRAISED DUCK - LO ARK ©






Braised duck can be found in most coffee shop and hawkers stalls. My memories of braised duck is during the Lunar New Year and Chinese All Souls Day - QingMing festival. 


Ingredients and Preparation for 4


Prepare :-
  • Garlic - 3 whole gloves 
  • Lemon grass - 2 stalks - cut into pieces
  • Galangal - 1 inch size - peel and smashed
  • Cinnamon - 2 pieces
  • Black pepper corn - 1 tbs
  • Chinese herbs-Dried Angelica Dahurica Benth -4 pcs

Prepare :-

  • 5 lbs Whole Duck.
  • Wash and pat dry with paper towels.


  • Cut whole piece duck into large slices.
  • Rub duck pieces and inner cavity with sea salt.

Cooking Steps

  • Using a large pot, or Dutch oven, add water to 3/4 full and boil over medium heat.
  • Add garlic, lemon grass, galangal, black pepper corn, cinnamon, Chinese herbs - Dried Angelica Dahurica Benth .
  • When water is boiling, add duck pieces into the boiling pot.
  • Make sure the water level reach halfway up the duck.

For flavor, add:-
  • 1 cup dark soya sauce
  • 1/2 cup sugar

Keep heat to low, and cover pot with lid.
Leave to simmer for 60 minutes to 90 minutes.


Baste duck pieces every couple of minutes to color it evenly.

When duck is cooked, leave on plate to cool.

Cut the duck into serving pieces, and serve with duck soup. Serve with fresh steam white rice.
