Pork loin or pork shoulder butt broiled in ginger and wine is a traditional recipe used by Chinese women to rejuvenate their weak health after given birth. Chinese women in some parts of the world who still keep to their cultural belief and practices believe in taking strict control of their diet when in confinement (the 30 days or 40 days isolation in bedroom away from lots of people after given birth) by having certain food diets strictly confined to ginger based cooking without salt, and with good quality wine with organic chicken and pork throughout the first three weeks, - and green vegetables which are introduced towards the fourth week . Practices such as limited exposure to windy environment, non-washing of hair, and cutting down on shower are all intended to reduce ailment to one's health in later years. It is believed that these strict practices are precautionary measures against arthritis, rheumatism, chronic headache, and poor reproductive health in later years.
Indeed, we can see more health issues with westerners who do not follow strict health regime and practices after given birth.
(Note: In confinement diets, chilli are strictly restricted).
Prepare 1 lb pork slices (preferably pork loin or pork shoulder butt)
Cooking Steps
Begin, by saute ginger, onion, garlic and chilli in 5 tbs cooking oil in a large skillet in medium heat until fragrant.
Add pork and stir-fry briefly.
For flavor, add:-
1/2 tbs salt
Stir seasonings into pork ingredients and fry briefly.
Cover with top, and leave to simmer for 5 minutes over medium heat. (Note: In confinement diets, chicken stock brand, salt and pepper are not recommended).
Add 1 cup water and 1 cup white wine. Broil for 5 minutes over low heat. (Note: In confinement diets, good quality wine for cooking are strongly encouraged).
Ready for serving.
